Simple 2-Ingredient Pancake to Celebrate Mardi Gras 2017

Celebrate the last day of Mardi Gras carnival season by eating delicious pancakes. Along with king cake, these are also traditional Mardi Gras foods. Countries like Ireland, England, Australia, New Zealand, and Canada refer to Mardi Gras day as “Pancake Day,” and celebrate Shrove Tuesday by having pancakes as the principal food item on the Mardi Gras day menu.

Pancakes are simple and easy to make. But what if making them could be much easier? With just two ingredients, you can make these quickly before you head over to the parade. Here are two, easy-to-make two-ingredient pancakes to try for Mardi Gras 2017!

Mardi Gras 2017: 2-Ingredient Pancake Recipes

2-Ingredient Banana Pancakes

Ingredients:

  • 1 medium ripe banana
  • 2 large eggs

Optional extras (choose a few!):

  • ¹⁄8 teaspoon baking powder, for fluffier pancakes
  • ¹⁄8 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1 tablespoon cocoa powder
  • 1 tablespoon honey
  • ½ cup chopped nuts
  • Chocolate chips, or a mix
  • ½ cup leftover granola
  • 1 cup fresh fruit, like blueberries, raspberries, or chopped apples
  • Butter or oil, for the pan
  • Maple syrup, jam, powdered sugar, or any other toppings, to serve

Materials:

  • Small mixing bowls
  • Dinner fork
  • Cast iron or nonstick griddle or skillet
  • Very thin, wide spatula, like a pancake spatula or fish spatula

Directions

In a large bowl, mash the bananas well with a fork. The consistency should be pudding-like with no lumps at all. Add baking powder, salt, vanilla, cocoa powder, or honey for flavor. Combine thoroughly.

Whisk eggs in a bowl. Pour the whipped eggs into the banana mixture and mix well. The batter will be loose and more runny than regular pancake mix.

Heat butter or vegetable oil in a non-stick pan over medium heat. Spoon a heap of batter onto the pan and spread with spatula. Cook it for one minute and add desired toppings like nuts or chocolate. Cook for two minutes again and flip it. Cook for another two minutes.

Remove from pan. Serve with maple syrup, honey, jam, or any extra toppings of your choice.

2-Ingredient Sweet Potato Pancakes

Ingredients:

Makes 1 serving

  • 1 roasted sweet potato
  • 2 eggs
  • Dash of cinnamon (optional)
  • Dash of allspice (optional)

Sauce:

  • ½ cup fat-free or 2% Greek yogurt
  • Dash of cinnamon
  • 1 teaspoon maple syrup

Directions

Skin the roasted sweet potato and mash it in a medium-sized bowl. Whisk in two eggs and add spices if you like. The consistency should be loose, like pudding.

Grease a pan with cooking spray and melt butter in it over medium-high heat. Take a good spoon of the batter and pour it into the pan.

Cook for five to seven minutes on the first side. Note that the pancakes will not bubble like typical pancakes, so timing is really important here. Flip and cook the other side for three to five minutes. Remove from the pan.

Sweet yogurt sauce

Mix fat-free or 2% Greek yogurt with a dash of cinnamon and maple syrup. Whip the ingredients well.

Serve the pancakes with sweet yogurt sauce.
