Ingredients: 

  • 1 ½ cups vanilla wafer crumbs
  • ½ cup confectioners’ sugar
  • ¹⁄3 cup unsweetened cocoa powder
  • ¹⁄3 cup butter, softened
  • 2 cups semi-sweet chocolate chips
  • 3 (8 ounce) packages cream cheese, room temperature
  • 1 (14 ounces) can sweetened condensed milk
  • 4 eggs
  • 2 teaspoons vanilla extract

Preheat the oven to 300°F.

Mix crushed vanilla wafers, confectioners’ sugar, cocoa, and butter in a mixing bowl. Press ingredients into a nine-inch springform pan.

Next, melt the chocolate chips in a broiler. Make a smooth consistency.

In another bowl, beat the cream cheese until fluffy. Stir in condensed milk and whisk it until smooth. Add melted chocolate, eggs, and vanilla. Mix the ingredients in with an electric mixer.

Pour the filing into a prepared crust and bake it in the oven at 300°F for 55 minutes. The cake might appear under-baked in the center. Don’t worry, take it out of the oven and let it cool. The center will get cooked gradually as the cake cools down.

Flourless Chocolate Cake Recipe

Ingredients:

  • ½ cup water
  • ¼ teaspoon salt
  • ¾ cup white sugar
  • 18 (1 ounce) squares bittersweet chocolate
  • 1 cup unsalted butter
  • 6 eggs

Directions

Start by preheating the oven to 300°F. Line a 10-inch round cake pan.

Add water in a saucepan and bring it to a boil. Add some salt and sugar. Stir until completely dissolved.

Melt some bittersweet chocolate in the microwave. Then, make a smooth consistency of the melted chocolate in a blender. Add some diced butter pieces and pour the hot-sugar water.

Next, beat eggs one at a time into the mixture and beat the mixture well. Pour the batter into the prepared pan. Be sure to use a pan larger than the cake pan. Place the cake pan in the larger pan and fill the pan with boiling water. The water should cover halfway up the sides of the cake pan.

Now, bake the cake for 45 minutes in the water bath at 300°F. You’ll observe that the center still remains moist. Chill the cake overnight in the pan.

To remove the cake from the pan, place the cake pan in hot water for 10 seconds and invert it onto a serving plate. Garnish with raspberry sauce.

Chantal’s New York Cheesecake Recipe

Ingredients:

  • 15 graham crackers, crushed
  • 2 tablespoons butter, melted
  • 4 (8 ounce) packages cream cheese
  • 1 ½ cups white sugar
  • ¾ cup milk
  • 4 eggs
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • ¼ cup all-purpose flour

Directions

Nicely grease a nine-inch springform pan and preheat the oven to 350°F.

Combine graham cracker crumbs with melted butter in a bowl. Press onto bottom of springform pan.

In another large bowl, mix cream cheese with sugar. Keep stirring until smooth. Stir in milk and beat eggs in the mixture one at a time. Also, add the sour cream, vanilla, and flour. Combine all the ingredients thoroughly well.

Pour the batter into a prepared crust and bake it in the oven for one hour. Turn off the oven but let the cake cool down in the oven itself for about 5 to 6 hours. Chill it before serving.
