From Breakfast to Booze: 3 Vegan Christmas Food Recipes to Try on Christmas Eve 2016

The countdown to Christmas has begun. We know this is the favorite time of the year to indulge in delicious Christmas food, however, you need not get disheartened if you are dieting. We have a list of vegan Christmas dinner recipes here for you to try.

Here are few delicious Christmas food ideas.

Gingerbread Granola

It is the best thing you can have as a Christmas breakfast.

Dry Ingredients:

  • 3 1/4 cups rolled oats
  • 1 3/4 cups raw nuts
  • 3 tbsp organic cane sugar or maple syrup mixed in with wet ingredients
  • 1/4 tsp sea salt
  • 1/2 tbsp ground cinnamon
  • 3/4 tsp ground ginger
  • a pinch ground cloves (optional)

Wet Ingredients:

  • 1/4 cup coconut or olive oil
  • 1/3 cup maple syrup (or honey if not vegan)
  • 2 tbsp molasses
  • 1 tsp vanilla extract

Recipe:

  • Preheat oven to 325°F
  • In a large bowl combine all the dry ingredients
  • Put the coconut oil, maple syrup, molasses and vanilla extract in a small pan and heat it over medium low heat; pour over the dry ingredients and mix well
  • Spread the mixture evenly onto a a large baking sheet and bake for 18 to 22 minutes; stir near the halfway point to ensure even cooking
  • You can see the granola crisp up nicely because of the coconut oil
  • Once the granola is browned, remove from the oven and let cool completely on the pan before storing it in an air-tight container (good for a few weeks)

High-Protein Eggnog Shake

Ingredients:

  • 1 cup milk of choice
  • 1/2 cup tofu
  • 1/2 tsp lemon juice (optional)
  • 1/8 tsp salt
  • 2 tsp xylitol or sugar
  • 1 NuNaturals NuStevia packet, or 1 tbsp sugar
  • 1/2 tsp pure vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp each nutmeg and ginger
  • 1/16 tsp (tiny dash) cloves
  • rum (optional)

Recipe:

  • Combine all ingredients and blend until smooth
  • Drink cold, or heat if desired

Popcorn Muddy Buddies

Ingredients:

  • 1/2 bag vegan buttery flavor popcorn
  • 1/2 cup dark chocolate chips
  • 1/2 cup creamy peanut butter
  • 2 cups powdered sugar

Recipe:

  • Mix the chocolate chips and peanut butter in a bowl and melt in the microwave on low heat for 30 seconds or until melted, stirring every 20 seconds
  • Pour half of the vegan buttery flavor popcorn into a large bowl
  • Drizzle the popcorn with half of the melted chocolate mixture and see that mixture evenly coats the popcorn
  • Add the remaining popcorn and chocolate mixture to the bowl and stir again to coat
  • Add the coated popcorn to a large paper bag (or a large bowl with a lid), pour in the powdered sugar, close the bag and shake to coat the popcorn
