Callan Smith: The Youngest “MasterChef” Contestant

The application took a few months to process, and then he received a call to audition for the show. During the auditions, Smith knew he was the youngest contestant, but he was hopeful and strived to give his best.

Callan Smith’s recipe in the auditions, a Japanese-inspired salmon tartare looked simple, but its taste floored the judges. For the dish, he first prepared the ponzu sorbet and the wasabi caviar. He then prepared the tuille using plain flour, butter, sea salt, castor sugar, egg white, nori sheet, and bonito flakes.

He dished the salmon tartare with pickled vegetables that included ginger, garlic, cucumber, salt, sugar, and wine vinegar. Then he made yuzu air from yuzu juice and soy lecithin powder. Smith was also among the top four MasterChef Australia 2017 contestants in the mystery box challenge.

Some of the other MasterChef Australia 2017 recipes prepared by the top 24 contestants include The Golden Ball, gnocchi, pork belly with crackling caramel vinegar sauce, The Tea Ceremony, and more.
