He completed his Higher School Certificate just a night before the audition process. He said he was able to balance his exams and the MasterChef auditions, but he had to take one step at a time.

Smith is the youngest contestant on the show, but he feels that this factor will not affect his victory. He is very focused and determined. He said he would never forget the day he applied to be on the show. It was a day of mixed emotions.

The application took a few months to process, and then he received a call to audition for the show. During the auditions, Smith knew he was the youngest contestant, but he was hopeful and strived to give his best.

Callan Smith’s recipe in the auditions, a Japanese-inspired salmon tartare looked simple, but its taste floored the judges. For the dish, he first prepared the ponzu sorbet and the wasabi caviar. He then prepared the tuille using plain flour, butter, sea salt, castor sugar, egg white, nori sheet, and bonito flakes.

He dished the salmon tartare with pickled vegetables that included ginger, garlic, cucumber, salt, sugar, and wine vinegar. Then he made yuzu air from yuzu juice and soy lecithin powder. Smith was also among the top four MasterChef Australia 2017 contestants in the mystery box challenge.

  • He tried out different recipes while working at Timba Wine War and has learned a lot along the way, but his style of cooking is different than that of his parents.
