Christmas morning affair is a tricky one. After a whole night of celebrating with family and friends, the kitchen is probably the place you want to be in early Christmas morning. However, a quick, easy and wholesome breakfast is very important to start your Christmas Day and stay in the holiday spirit.
A light and healthy breakfast gives you nutrition without filling you up, because lunch is just a couple of hours away, and half a day before the grand Christmas dinner feast. So, for Christmas 2016, don’t have a regular breakfast of oats, pancakes and omelettes. Instead make something festive with these delicious Christmas breakfast ideas!
Overnight Pumpkin Pie Oatmeal
In an oven-proof baking dish, combine four and a half cups milk, a can of pumpkin puree, a half cup of maple syrup, one tablespoon each of vanilla and cinnamon, and one-fourth of a tablespoon of nutmeg and salt. Stir until it has mixed well. To this, add about two whole cups of steel cut oats.
Place the baking dish in a slow cooker and gently pour water, until one inch below the top of the dish. Cover and cook on the lowest setting for eight hours overnight. Stir well the next morning and serve with warm toast or chopped walnuts.
Take a baking tray and grease it. Cut six English muffins into cubes and place half of the quantity on the bottom of the dish. Cut six ounces of bacon and one and a half cups of asparagus into one inch pieces. Add half the bacon and asparagus to the dish. Repeat with the remaining muffin cubes, bacon, and asparagus. In another bowl, combine eight eggs with a little milk, salt, pepper, onion powder, and paprika and pour over.
Refrigerate it overnight. Bake it the next morning in a preheated oven at 350°F for 40 minutes covered. Sprinkle mozzarella and green onions and bake for another 10 minutes, uncovered. Serve hot.
Hash Brown Casserole
Combine five cups hash browns, two slices ham, half a cup of cheddar, and green onions and layer in a greased baking tray. Separately, whisk four eggs, twelve ounces of evaporated milk, salt, pepper, and garlic powder and pour over the potatoes. Cover with foil and bake for 40 minutes. Remove foil, sprinkle more cheese, and bake for 10 more minutes before serving.
Add 200 grams of oats to 400 ml of milk, honey, and crème fraîche and soak overnight. Next morning, add chopped grapes, apples, bananas, dried cranberries, and crème fraîche. Serve with more milk and cherries to garnish.
Christmas Breakfast Board
On a wooden breakfast board, place radishes, flavored butter, cubes of cheddar, fresh basil leaves or pesto with tomatoes, buffalo mozzarella, and chutney. Alongside, you can serve it with an assortment of breads like traditional Christmas panettone, baguettes, or French toast.
Also, natural jams, maple syrup, and chocolate spread with chopped dried fruits and nuts can be included. Serve the entire board on the table with plenty of tea, coffee, freshly squeezed juice or hot chocolate to wash it down.
