Christmas Breakfast: Recipes to Start Christmas Morning the Ideal Way

There are so many favorites and maybe you can already imagine the breakfast table with classic French toast, bacon, pancakes, and egg casserole. Christmas Breakfast Recipes

Baked Gingerbread French Toast:  Serves: 6-8

Ingredients: 

  • 1 lb day old crusty white bread (or Italian bread)
  • 12 eggs (lightly beaten)
  • 1 1/2 cup milk
  • 1/2 cup molasses
  • 1 cup heavy cream
  • 2 tbsp brown sugar
  • 6 tbsp melted butter
  • 1/2 tsp ground cloves
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp powdered ginger
  • powdered sugar for dusting

Method:

Preheat oven to 350°F and generously grease a 9-by-13 baker.

Cube the bread into chunky pieces and place in baker.

Mix the rest of the ingredients in a large mixing bowl until combined. Pour over bread and toss well to coat. Let sit for five minutes.

Place in a 350°F oven for 45 minutes to one hour. Bake until eggs are set. If the top gets too brown while baking, cover with foil.

Bacon and Egg Puff Pastry Breakfast Tart

Ingredients: 

  • 1 sheet of puff pastry (thawed)
  • 1 tbsp finely diced chives
  • 3 ounces of mascarpone cheese
  • 6 strips of bacon (cooked)
  • 6 eggs
  • Egg wash (1 egg beaten with 1 tbsp milk)
  • Salt and pepper.

Method:

Pre-heat the oven to 425°F.

On a lightly floured surface roll the puff pasty into a rectangle about 1/4 inch thick.

With a sharp knife cut a border of about 1/2 inch around the entire rectangle. Prick only the center of the rectangle with the tines of a fork. Spread the mascarpone cheese evenly in the center. Sprinkle with the chives, and top with bacon. Brush the edges with the egg wash.

Bake tart for 10 minutes. Crack the eggs onto the tart, season to taste with salt and pepper. Return to the oven for another 10 minutes (or until the eggs are done to your preference). Sprinkle with additional chives (optional).

Super Easy Egg Casserole

Serves: 4

Ingredients: 

  • 1 cup shredded cheddar cheese
  • 6 eggs (whisked)
  • 6 slices bacon
  • 1/3 red bell pepper (cubed)
  • 2 slices bread (diced)
  • 3 tablespoons milk
  • 2 green onions (diced)
  • 1/2 teaspoon minced garlic or to taste (optional)
  • Salt and ground black pepper to taste

Method:

Preheat oven to 350°F (175°C). Grease a 9-by-13-inch baking dish.

Stir cheddar cheese, eggs, bacon, bread, red bell pepper, green onion, milk, garlic, salt, and black pepper together in a bowl until well-combined. Pour into prepared baking dish.

Bake in the preheated oven until eggs are set, 20 to 25 minutes.

Bacon-Apple Baked Pancake

Serves: 4

Ingredients: 

  • 3/4 cup whole milk
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 tbsp canola or vegetable oil
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 1/2 tsp baking powder
  • 1 large apple
  • 8 strips bacon
  • 1 tsp cinnamon
  • 1/4 cup packed brown sugar
  • Kosher salt

Method:

Heat the oven to 375°F.

In a blender, combine the milk, egg, oil, and vanilla. Blend until smooth. With the blender running on low, sprinkle in the flour, sugar, baking powder, and 1/2 teaspoon salt. Once smooth, set aside.

Core the apple (leaving fruit intact). Set the apple on its side and cut it into thin round slices. Set aside.

Heat a large oven-safe skillet over medium. Add the bacon and cook for six to seven minutes on one side. Spoon out and discard about half of the fat in the pan. Turn the bacon strips to cook on the other side, laying them flat and evenly over the bottom of the pan. Top the bacon with the apple slices, arranging them evenly. Cover the pan and cook for two minutes.

Mix the brown sugar, cinnamon, and a pinch of salt. Sprinkle the mixture over the apples. Carefully and evenly pour the pancake batter over the apples and bacon. Place the skillet in the oven. Bake until lightly browned and cooked through (about 20 minutes).

Let the pancake cool for five minutes. Use a paring knife to loosen the edges of the pancake, then overturn a large serving plate over the skillet. Invert the skillet to release the pancake onto the plate. Cut into wedges.
