Although pancakes can be quite indulgent, this lightened up recipe is anything but. Using non-fat dairy products and whole wheat flour, the nutrition in these slapjacks has been kicked up many notches. You can now enjoy this weekend brunch favourite without any guilt.

Greek Yogurt Pancakes

Ingredients

  • 1 cup of non-fat or 2% Greek yogurt
  • 3/4 cups of skim milk
  • 1 cup of whole wheat flour
  • 1/4 cup of flour
  • 1 egg
  • 1 egg white
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt

Directions

In a small bowl, combine flours, baking powder, baking soda, and salt.
In a separate bowl, whisk together eggs, yogurt, vanilla, and milk.
Pour dry ingredients into wet and stir until combined. Do not over mix.
Spray a medium size pan with cooking spray over medium heat. Pour batter into pan (make them the size you prefer).
Cook until bubbles form—this should take about two minutes, then flip. Cook about another one to two minutes until golden brown.
