Paul McCartney previously teamed up with his daughters Stella and Mary to launch Meat Free Monday— a not-for-profit campaign that shows people the value of eating less meat by raising awareness of the environmental impact of meat consumption, preserving natural resources, and encouraging climate change. Also, the campaign suggests that people have at least one meat-free day every week.
Since 1975 Paul McCartney has avoided eating meat as a vegetarian. The 74-year-old singer-songwriter of The Beatles fame now credits his vegan diet to his healthy lifestyle. Although vegetarians consume eggs and dairy, vegans avoid all animal byproducts.
The vegan diet contains a variety of plant-based foods like fruits, vegetables, lentils, beans, nuts, seeds, quinoa, buckwheat, brown rice, and oatmeal. Vegans like Paul McCartney will exclude all types of animals from the diet, including fish, poultry, and meat.
Meat Free Monday Recipe: Potato and Pea Samosas
In 2012, Paul McCartney and his daughters released “The Meat Free Monday Cookbook: A Full Menu for Every Monday of the Year.” One of the vegan recipes from the book is potato and pea samosas.
- 400g of potatoes, peeled and but into 1cm pieces
- 150g frozen peas, cooked and drained
- 1/2 tsp. of cumin seeds
- 1/2 tsp. of coriander seeds
- Seeds from 4 cardamom pods
- 1/2 tsp. of black onion seeds
- 2 tbsp. of sunflower oil
- 1 finely chopped onion
- 1 large garlic clove, crushed
- 1/2 tbsp, of freshly grated ginger
- 1 large green chili, deseeded and finely chopped
- 1/2 tsp. of turmeric powder
- 1/4 tsp. of chili powder
- 1 rounded tbsp. of mango chutney
- 2 tbsp. of chopped cilantro
- 270g filo pastry
- Melted oil to brush
- Sea salt and freshly ground black pepper
- Cook potatoes in boiling salted water until tender. Next, add the peas and cook for an additional 30 seconds, then drain and set aside.
- In a frying pan, toast the cumin, cardamom, and coriander over medium heat for about one minute. Then, coarsely grind the onion seeds with a pestle and mortar.
- Heat oil in a large frying pan, then add the onion, and cook until soft. Add the chili, ginger, and garlic, cook for 30 seconds, and add the other spices. Cook for another minute, then add the potatoes and peas. Mix well, and cook for about four minutes, and stir frequently. Remove from heat, and add chopped cilantro and chutney.
- Preheat oven to 375 degrees Fahrenheit. Next, brush a sheet of filo pastry with oil. Put another pastry sheet on top, and cut into 7cm wide strips, and again brush with oil. Spoon the potato mixture at the top left corner of each strip, and fold to make a triangle. Continue to fold to the length of the strip to completely cover the filling. Continue to make more with the remaining pastry and filling, and arrange them on a baking tray. Bake for 25 minutes or until they appear golden brown.
