Healthy Coconut Curry Rice

Ingredients

  • 2 cups of brown basmati or jasmine rice
  • 3.5 cups water
  • 1 can black-eyed peas (drained and rinsed)
  • 1 or 2 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp Caribbean hot sauce
  • 1 or 2 tsp Caribbean spice
  • 2 or 3 tbsp organic, extra-virgin coconut oil

Directions

Place rice in stovetop pot with water, let boil.
Simmer on low heat until water is absorbed, remove from heat.
Stir in peas, spices and coconut oil, fold.
Place back on burner without heat for 15-20 minutes.
Let stand for 20 minutes.
Serve with your favorite grilled fish or chicken breast.
